Low-sodium vegetable moong dal khichdi

Four preparation stages for vegetable moong dal khichdi

Preparation

Measure and inspectMeasure dal and rice dry. Dice carrots, beans or locally available non-starchy vegetables into even 1 cm pieces.
Rinse and soakRinse dal and rice separately until the water is mostly clear. Soak together for 15 minutes, then drain.
Build flavour without excess saltWarm oil. Add ½ tsp cumin, grated ginger and turmeric. Stir for 30 seconds; do not burn the spices.
Pressure cookAdd rice, dal, vegetables and water. Cook for 3 whistles or 12 minutes at pressure. Let pressure release naturally.
Finish and portionStir to a soft consistency. Add lemon, coriander and black pepper. Divide equally; serve with 150 g cucumber salad and 100 g plain curd if appropriate.
